OUR PROFILES
BLANCO
Eleven20 Tequila 100% Agave Blanco is crystal clear, full-bodied and slow to mature. Its complexity comes from the aroma and flavor of sweet agave, herbs and citrus, maintaining the authentic taste of our agave fields.
REPOSADO
Eleven20 Tequila 100% Agave Reposado is aged for 90 days in white oak barrels used for bourbon. The liquid is light amber in color, with slow teardrop aroma and flavor of cooked agave, oak and fresh mint, maintaining the balance between agave flavor and woody notes.
AÑEJO
Eleven20 Tequila 100% Agave Añejo seeks to highlight the flavor of the wood rested for 12 months in white oak barrels used in bourbon, red and white wines. It is a copper color with golden amber reflections, slow tears and a complex body. Its flavor is smoky with notes of vanilla and caramel provided entirely by its ageing in our barrels as it has nothing added.

OUR PROCESS
Our Premium Tequila 100% Agave comes from the ‘Valle’ (Valley) Region – The major Tequila production area in Jalisco.
Created by experienced maestros tequileros, with the utmost quality and complexity, achieved by combining the ancient traditional methods of distilling agave with modern techniques to satisfy the new world market demands.
Agave Harvesting:
Our agave grows in the Jalisco Valley region and is harvested between 6 to 7 years of age. Our experienced jimadores harvest the agave and prepare the piña for cooking.
Cooking:
Once we have the agave piña in our facilities, they are cut in half and set to high pressure for 10 to 11 hours.
Extraction:
After the agave piñas have been cooked for 10 to 11 hours, they are taken to the roller mill to extract the juices from the piña.
Fermentation:
The juice extracted from the piña is called mosto and is fermented to transform the sugars into alcohols. This process lasts up to 48 hours in stainless-steel tanks of 10,000 liters.
Double Distillation:
To separate the alcohols and keep the best quality spirit of tequila, the liquid goes through a double distillation process, carefully controlled by our expert maestro tequilero.
Aging:
Tequila Blanco obtained straight from the distillation goes to the white oak barrels. We let is rest from 3 months to 3 years, to get the notes of wood and caramel of our premium Tequila Reposado, and Añejo.
